Willow's Banana Elderberry Bread

Dry Ingredients

2 cups whole-wheat flour

2 cups white flour

1/2 cup white sugar

1/2 cup brown sugar

1 tsp salt

5 tsp baking powder

1 tsp baking soda

Wet Ingredients

1/2 cup Canola oil

2 large eggs

1 cup milk

1/2 cup sour cream

1 tsp vanilla

2 cups mashed bananas (about 5)

3/4 cup fresh elderberries (or reconstituted elderberries - see instructions below)

1 cup of chopped nuts if desired.

Directions

~ Combine all of the dry ingredients. Set aside.

~ Blend all of the wet ingredients with the bananas.

~ Mix dry ingredients into wet, but do not over mix. Batter will be lumpy.

~ Stir in elderberries and/or nuts.

~ Divide into two 9x5-inch greased loaf pans.

~ Bake at 350 degrees Fahrenheit for 50-60 minutes, or until toothpick inserted in center comes out clean. Do not overcook.

~ Remove and let sit on cooling racks for approximately ten minutes before cutting.

~ Best eaten warm and slathered in butter.
